Hello Fish Fans, Here’s a mouth watering recipe you might want to consider for your next dolphin dinner. Parmesan Fish Filets for 4 to 6 servings. You’ll need : 2 pounds of 1/2 inch dolphin filets, 1 cup mayo, 1/4 cup chives, 1 egg white stiffly beaten, 2 to 3 tablespoons grated parmesan cheese, 1 tablespoon fresh minced parsley, lemon slices for garnish or not.
Preheat oven to 425, rinse and pat dry filets, place in a greased baking dish or pan. Combine mayo with chives. Fold 1/2 to 3/4 of stiffly beaten egg white into mixture to lighten mayo, not too much or mixture will be too loose. Spread evenly over the dolphin and sprinkle with parmesan cheese and parsley. Bake until topping is puffed, about 10 to 12 minutes, then broil for 1 or 2 minutes until golden brown.
