Welcome aboard the REEL BUSY , a Stuart Fl. Fishing Machine. The winds been blowing and 10 to 12 foot seas has kept us reel busy rescheduling charters instead of catching fish. We’ve only been out once since my last report but we had a great day on the water catching Dolphin. The Dolphin fishing is good to excellent this time of year and most of the Dolphin we caught were 8 to 12 pounds, the largest was 22. The Dolphin fish is also referred to as Mahi-Mahi or Dorado but no-matter what you call them they put on a show and taste great on a plate. Fried, Baked or Broiled is all good but here’s a recipe you got to try. You’ll need a couple pounds of 1/2 inch thick Dolphin filets, 1/4 cup of snipped chives, 1 egg white stiffly beaten, 2 to 3 tablespoons of grated parmesan cheese and 1 tablespoon of minced fresh parsley. Preheat oven to 425. Rinse and dry your filets and place them on a greased baking dish. Combine mayonnaise with chives. Fold 1/2 to 3/4 egg white into mixture to lighten mayonnaise, do not add too much or mixture will be too loose. Spread evenly over the Dolphin filets and sprinkle with parmesan and parsley. Bake until topping is puffed ( about 5 minutes ) then broil about 2 minutes or until topping is golden brown, enjoy the feast. Here’s another tip to get the best out of Dolphin filets, NEVER PULL THE SKIN OFF, CUT IT OFF. Cutting it off removes the skin texture that remains on the filets when you pull off the skin. The Sailfishing remains a bit hit & miss but any day can be a great day this time of year. We never saw a Sailfish the other day but another boat just 2 miles away from us caught 4 and missed another one. We moved a bit further south to join him but found more Dolphin and no Sailfish. The sea conditions are improving and we hope to get back out there reel soon.
